How to Make Albanian Liver?
Ingredients:
- 500 g lamb or beef liver
- 1 cup flour
- 2 red bell peppers
- 1 teaspoon salt
- 1 teaspoon red pepper flakes
- 1 teaspoon black pepper
- Enough sunflower oil (for frying)
- 1 onion (optional)
- 1/2 bunch parsley (optional)
Preparation:
- Clean the membranes of the liver and slice them into 1 cm thickness. Place the chopped liver in a bowl and thoroughly mix with salt and black pepper.
- Pour flour into a wide bowl or tray. Coat the seasoned liver pieces in flour.
- Add sufficient sunflower oil to a frying pan and, once the oil is hot, place the floured liver pieces in the pan.
- Fry the liver until nicely browned on both sides (approximately 2-3 minutes per side).
- Transfer the fried liver to a plate lined with paper towels to drain excess oil.
Serving:
- Finely chop the red bell peppers and optionally slice the onion into half rings.
- Also, finely chop the parsley.
- Sprinkle the red bell peppers, onion, and parsley over the fried liver.
- Optionally, sprinkle some more red pepper flakes on top.
- Serve hot.
