How to Make Albanian Liver?


  • 500 g lamb or beef liver
  • 1 cup flour
  • 2 red bell peppers
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • Enough sunflower oil (for frying)
  • 1 onion (optional)
  • 1/2 bunch parsley (optional)


  • Clean the membranes of the liver and slice them into 1 cm thickness. Place the chopped liver in a bowl and thoroughly mix with salt and black pepper.
  • Pour flour into a wide bowl or tray. Coat the seasoned liver pieces in flour.
  • Add sufficient sunflower oil to a frying pan and, once the oil is hot, place the floured liver pieces in the pan.
  • Fry the liver until nicely browned on both sides (approximately 2-3 minutes per side).
  • Transfer the fried liver to a plate lined with paper towels to drain excess oil.


  • Finely chop the red bell peppers and optionally slice the onion into half rings.
  • Also, finely chop the parsley.
  • Sprinkle the red bell peppers, onion, and parsley over the fried liver.
  • Optionally, sprinkle some more red pepper flakes on top.
  • Serve hot.
